Ingredients

  • Sandwich Rolls 
  • Pickles 
  • 8 oz Lions Mane mushroom
  • 16 Oz BBQ Sauce
  • 4 oz of liquid (broth, water)
  • 1 tbsp vegetable oil 
  • Spices: 1/2 each: garlic powder,onion powder, salt, black pepper, paprika
  • 12oz Cabbage
  • 4 tbsp Mayo
  • 1 tsp Apple cider vinegar (or to taste)
  • 1/4 tsp each Salt, pepper, smoked paprika, onion powder

Directions

First make the coleslaw. Start by massaging the cabbage in a bowl with salt. Next make the dressing by combining the mayo, spices and vinegar.  Mix the cabbage and dressing together and place in the fridge to marinade.

Heat the oven up to 425 degrees. 

Next, shred the lion’s mane mushrooms and place them in a bowl.  In the meantime start heating a large pan.  While the pan is heating up add all spices to the bowl of mushrooms and mix well.  Once the pan is hot add the oil to the pan, wait for it to heat up (about 30 seconds) and then add the shredded mushrooms.  Don’t worry about overcrowding the pan as the mushroom will shrink quite a bit during cooking.  Cook the mushrooms on medium heat for about 6 minutes or once the water has cooked out they are browned.

Once the lion’s mane is cooked, place it back in a bowl and pour the barbecue sauce and liquid and mix well together. Pour the mushroom mixture onto a sheet pan lined with parchment paper or foil and cook for about 10 minutes, till the sauce has thickened lightly caramelized.  When the mushrooms are done, remove room the oven and set aside while preparing the sandwiches.

To make the sandwich, separate your buns, add the BBQ lion’s mane mushrooms and top with coleslaw and pickles.
