Cooked lion’s mane crabcakes

Lions Mane Mushroom Crab Cake Recipe

Serves: 6-8
Prep time: 45 min (includes chilling for 30 minutes)
Cook time: 20 min

Ingredients

  • 6 oz lion’s mane mushroom
  • 1 tsp Old bay seasoning
  • Hawaiian Rolls
  • 2 tbsp chopped Parsley
  • 1/2 cup Panko breadcrumbs 
  • 2 tbsp chopped chives or green onion
  • 1 large egg 
  • 1 lemon (sliced into 4)
  • Dash hot sauce 
  • 3 tbsp mayo 
  • 2 teaspoons Dijon mustard 
  • 4oz tartar sauce 

Directions
Finely shred the lion’s mane mushroom and place in a bowl.  Heat a up a medium pan with a thin layer of oil. Once heated add the mushrooms and cooking until the water has come out.  Press on the mushrooms down while cooking to help press out the water.

Once the lions mane is cooked, place back in the bowl and let cool.  In the meantime chop parsley, onion or chives and slice lemon.  Once the mushrooms have cooled a bit, mix in the mayo, egg, hot sauce, mustard old bay spice, parsley, onion and breadcrumbs and combine well together.  Shape batter into 2 inch patties and place on a sheet pan. Refrigerate the patties for 30 minutes to let ingredients marinade together. 

When patties are ready take out of the fridge and pre heat a pan or air fryer.  

If cooking in a pan, layer it with a light coating of oil and cook patties in batches replenishing oil as needed. To cook the patties cook 2-3 min on each side or until browned. 

If cooking in air fryer, preheat to 400.  Coat the air fryer with oil and the patties once added in. Cook patties for 7-9 minutes.
